One-Pan Tomato Rotisserie Chicken Pasta

User leftover Costco rotisserie chicken to serve this quick and rich testing tomato chicken pasta.

What to do with the Costco rotisserie chicken after you serve up the breast meat?  Use an Instant Pot to set a broth while loosening the chicken meat from the bones.  Save time by not boiling pasta separately, and cooking all ingredients in one pan will enhance the flavor.  Serve this healthy and convenient tomato pasta for a family of 5 with leftovers for the kid’s lunch.

Ingredients

1 Costco Rotisserie Chicken (take out breast meat)

1 RAO’s marinara sauce or similar

12 oz. spaghetti noodles (about 3/4 box)

1/2 onion

1 celery

1 carrot

3 mushrooms

4 garlic clove

3-4 asparagus

extra virgin olive oil

2 bay leaves

 

Instructions

Prepare Chicken
  • Place chicken with bones in the Instant Pot
  • Add 2 cups of water
  • Cook on high pressure for 20 minutes

  • Remove chicken from broth (save broth for sauce)

 

  • Remove chicken meat from bones

Prepare Tomato Sauce
  • Chop 1 celery
  • Dice 1/2 onion
  • Dice 1 carrot
  • Dice 3 mushrooms
  • Dice 4 garlic cloves
  • Slice 3-4 asparagus
Diced celery, carrot, onion, and mushrooms

  • Sauté garlic w/ 2 tablespoons extra virgin olive oil

 

  • When oil starts to bubble and you can smell the garlic, add celery, carrot, onion, and mushrooms

 

  • Stir and add a pinch of salt (tip: cooks garlic and removes water)
  • Add pepper
  • When onion is clear, add chicken

 

  • Add one jar of tomato sauce

 

  • Fill jar to top with chicken broth (tip: helps to clean out jar)
  • Stir until sauce boils

 

Add Noodles
  • After sauce comes to a boil, add 12 oz. spaghetti noodles (about 3/4 box)

 

  • Add 2 bay leaves
  • Cover noodles with sauce and stir occasionally for 5 minutes

 

  • At 5 minutes, add 1 cup of chicken broth
  • Continue to stir for another 5 minutes

 

  • At 5 minutes, stir in asparagus and turn off heat
  • Add a pinch of salt and pepper

 

Serve
  • Serve with parmesan cheese (optional)
