Okinawan Rotisserie Chicken Taco Rice

Use leftover Costco rotisserie chicken to serve this Okinawan comfort food for the family.

What to do with the Costco rotisserie chicken after you served up the breast meat?  Use the leftover dark chicken meat to prepare a hearty and family favorite, taco rice.

Ingredients

1 Costco Rotisserie Chicken (take out breast meat)

2 garlic cloves

1/2 onion (chopped)

1/4 onion (diced)

1 can black beans (Bush’s Best)

1 pack chili or taco seasoning (McCormick)

1/2 teaspoon cumin

1 bottle salsa

1 bag grated sharp cheddar cheese

1/2 head lettuce

1 bag chips

rice

 

Instructions

Prepare Chicken
  • Add chicken with bones in a pan

 

  • Add 1 1/2 cups of water
  • Cook on high heat until a boil
  • Remove chicken meat from bones

Prepare Garlic and Onions
  • Chop 2 garlic cloves
  • Chop 1/2 onion

 

Add Beans and Seasoning
  • Wash 1 can beans and add to pan
  • Add 1 chilli pack or taco seasoning

 

  • Stir over medium heat

 

  • Add 1 cup water
  • Add 1/2 teaspoon cumin
  • Stir on medium heat for 5 minutes

 

Serve

Cover hot rice with lettuce, diced onions, salsa, cheese, and chips (avocado optional)
