What do you do with the Costco rotisserie chicken after you served the breast meat? Use an Instant Pot to set a broth while loosening the chicken meat from the bones. Add spices and serve an Indian chicken curry that is not too spicy for the 6-year old, but still enough flavor for the husband. Ingredients
1 Costco Rotisserie Chicken (take out breast meat)
6 Garlic Cloves
1 onion
3 tablespoons olive oil
1 tablespoon garam masala
1 tablespoon cumin powder
1 tablespoon turmeric
1 tablespoon curry powder
1 tablespoon coriander ground
1 can tomato paste
1 cube of Knorr Chicken Bouillon
1 can S&W Garbanzos Chick Peas (low sodium)
Prepare Broth
- Place chicken with bones in the Instant Pot
- Add 2 cups of water
- Cook on high pressure cook for 20 minutes
- Remove chicken from broth
- Remove chicken meat from bones
Prepare Chicken
- Chop 6 cloves of garlic (food processor or by hand)
- Dice 1 onion
- Fry garlic w/ 3 tablespoons olive oil
- While stirring on medium heat, add onions
- Add a pinch of salt
- Stir until brown
Add Spices
- Set to low heat
- Add 1 tablespoons masala to chicken
- Add 1 tablespoon masala
- Add 1 tablespoon cumin
- Add 1 tablespoon turmeric
- Add 1 tablespoon curry powder
- Add 1 tablespoon coriander ground
- Add 3 pots of cardamon
- Stir in 1 can tomato paste
- Add chicken broth
- Add 1 cube of Knorr Chicken Bouillon
- Stir on low heat
- Add 1 can S&W Garbanzos Chick Peas
- Stir for another 5 minutes
Serve
- Serve on rice (parsley and boiled egg optional)
